These rainbow noodles are very easy to make. It is dyed completely naturally, using only a few vegetables and spices to create a full rainbow of colors. This “color” is beautiful and vibrant, but completely harmless and almost or completely tasteless.

We chose traditional spaghetti for this recipe, but the colors will work with any pasta or pasta combination. White pasta takes on the color best, but whole grain pasta works too; the colors just won’t be as bright. If you’re going for gluten-free pasta, I recommend a lighter pasta such as corn, quinoa, or chickpea pasta.

To start, boil a box of pasta in well-salted water for 2 minutes less than recommended so that it is not too hard when you dip it in the natural colors. Rinse in cold water to prevent further cooking and divide into six Tupperware bowls or Ziploc bags and set aside.

Then create the natural colors of the pasta. The colors come from four simple ingredients: turmeric, purple cabbage, beets, and baking soda. We’ll start with simple pinks, purples, and yellows. The rest of the colors are created using a little food chemistry or by mixing colors.

I should be clear from the start: colored pasta is not the same as flavored pasta. There are ways to add flavor to pasta, and we’ll probably get there eventually, but for the most part, colored pasta is a beautiful creation. And frankly, speaking from personal, if limited, experience, I’d urge anyone who wants to taste their dough to reconsider: you’ll always get a better, fresher, and more learned version of the sauce.

Coloring pasta dough is as easy as preparing a richly colored puree and mixing it into the dough. In fact, once you have a colored puree, the process is almost identical to making regular, neutral colored pasta. Today we will make four pasta doughs of different colors. A bright pink paste dyed with beetroot, a deep black paste dyed with squid ink, a green paste made from spinach, and a golden orange paste that takes its look from tomato paste. It’s also helpful to have a parchment-lined sheet pan for rolling out the dough, a kitchen towel and/or plastic wrap to cover it and keep it from drying out, and some flour to keep the pasta from falling. sticky The only other thing you need is a few square feet of surface.
