Not long after we got married, an elderly lady from our church shared this easy caramel frosting recipe with me. I was so excited when I tried it because it tasted just like my grandma’s famous recipe!
But instead of being difficult to make, this recipe was super easy and a go-to caramel frosting recipe that always turns out perfect!

I’m usually a chocolate cake person myself, but this recipe changed me. Even Zach wanted a second track, and he has absolutely no sweet tooth. It’s sweet, but not as sweet as you’d expect. While the frosting is definitely super rich, it somehow doesn’t feel overpowering when paired with the cake, which is exactly the balance I was hoping to achieve when I started working on this recipe.
The cake layers I used for this caramel cake recipe are actually modified from my favorite vanilla cake made using the reverse cream method. Let’s talk a little, if you’ve never tried this method before…
Caramel Gingerbread Cake
Making reverse cream means instead of the traditional method of boiling butter, sugar and other wet ingredients in one pot, we combine our dry ingredients, another, and then combine the two (be careful, of course, that we don’t overdo it). … back a bit.
We start by mixing all of our dry ingredients and the sugar in a bowl, then slowly whisking, one tablespoon at a time, into the oil until you have a sandy looking mixture (see the first picture above). Then we add the rest of the wet ingredients and beat until fully combined. You don’t have to worry about overcooking our batter like you do with traditional cream cakes (like the layers in my coconut cake). This method results in a nice, fluffy cake. It was the perfect choice for my caramel cake.
Sour cream is not my invention. It’s been around for years and its popularity is largely attributed to Rose Levy Beranbaum, author of The Cake Bible. I’ve tried this reverse cream method on most cake recipes I’ve had and it works well. Although I don’t prefer it for all cakes, it’s the only way to make more of my vanilla cupcakes!
Perfect Southern Caramel Cake Recipe (with Salted Caramel Frosting)
Pie crust is definitely an important part of a caramel cake, but ultimately it’s really a vanilla cake. A soft, delicate vanilla cake with a moist crumb and brown sugar dusting to bring out the caramel flavor, but still. That’s what really makes this recipe
It’s rich, sweet (much sweeter than my favorite cream cheese), and has a real caramel flavor because we start with a real caramel base in the oven (which is similar to my caramel sauce). Melt the powdered sugar, butter, salt, milk and cream. Cook until the sugar dissolves, then bring to a boil. Boil for 5 minutes. Now you have a caramel base (first photo above).
Transfer this hot caramel to a large bowl, add powdered sugar and vanilla extract and beat until it has a spreadable frosting consistency (second photo above). If it is too thin and drips from the cake, beat it longer. In the video (under the recipe) I got a little too ambitious and tried to spread the frosting while it was still very warm and my layers started to sag a bit. A little patience goes a long way!
