Americolor Soft Gel Paste Kits: These water-based gels are the best (in my opinion). They are highly concentrated, so you don’t need to use a lot to get rich colors. They also don’t affect the taste or texture of buttercream and come in just about any color you can imagine – you’ll never have to worry about mixing custom colors.

If you are serious about your creamy color palettes, I highly recommend the Nifty Fifty set or the Heavenly Seventy set. As the names suggest, Nifty Fifty contains 50 gel colors and Heavenly Seventy contains 70 gel colors. Of course, each Americolor gel can be purchased separately (they come in several bottles of different sizes), but it is always ideal and inspiring to have a complete set full of colored gels at hand.

I need to bleach it before adding color (we’ll get to the meaning of this later), my favorite coating whitener is Americolor Bright White Hands. If you’ve ever struggled with a buttercream that’s too yellow for your taste, I recommend keeping a large bottle of this on hand.

Wilton Color Right Food Coloring System: If you don’t want to invest in a large set of Americolor gels and don’t want to keep buying colors one by one, the Wilton Color Right food coloring system is great. Contains eight water-based gels that can be mixed together to create custom colors. Again, they are highly concentrated and do not affect the taste of your buttercream. The only thing I would point out is that you need to know basic color theory to get the colors you want (I’ll give you a little lesson below!).

I realize there are other brands and types of food coloring products, but the ones above are the ones I reach for on a daily basis and account for all the color palettes I’ve been able to create. With that in mind, read on for everything I know about making colored buttercream.

Buttercream I use because it makes a huge difference in the color effect. I use this custard recipe for everything I make which is American buttercream. Of all the types of buttercream, American buttercream is the easiest to color and produce rich, dark tones with minimal product.

Other types of buttercream, such as Swiss meringue or other meringue-based creams, do not take color as easily because the high fat content is incompatible with water-based gels. This may mean using more product, using different types of products (such as oil-based gels), waiting longer for the color to develop and deepen, or using alternative methods of coloring the cream. I’ve never worked with any other type of buttercream before, so if you’re opting for Swiss (or other) meringue, you may need to research the best methods and products to use with what you’re working with.

Well, by the same token, when painting buttercream, it’s important to know that whatever color your buttercream comes from (also known as base color), it will mix with whatever color you add, which has a huge impact on the final color. For the cleanest color palettes, start with white buttercream, as white + any color = same color (which intensifies as more color is added).

My vanilla buttercream recipe is quite pale at first and easy to mix with colors, but if you start with a more yellow buttercream, that yellow color will blend with whatever color you add to it. To overcome this, you need a good coating whitener, such as the Americolor Bright White mentioned above. I add a teaspoon or two to each serving of my buttercream at the very end of the recipe, making sure it’s mixed well, and just look at the difference it makes:

It’s a good idea to start with a yellowish buttercream if the end result of coloring will be in the group of yellow shades (yellow, orange, lime, etc.), but just remember that the base color will affect the final result. Other than that, I only recommend it once
