How To Make Turquoise Icing With Food Coloring – I think one of the coolest things about cakes is how artistic they can be, and a big part of that comes from the freedom to make any color buttercream you can imagine! In fact, when planning my cakes, I like to use a color palette and the colors turn out exactly when I envisioned them. As with anything, getting my buttercream color right came with a lot of practice and I’ve found the products I love to help make it happen.
I’m excited to share with you what I know about buttercream coloring, especially since how do I get buttercream coloring has been one of the most asked questions over the years. I actually started with liquid primer food color you can find in the baking aisle at any grocery store, over the years I learned that using gel-based food color
These are the differences I rely on and will cover throughout this post:
Americolor Soft Gel Paste Kits: This water based gel is the best (in my opinion). They are highly concentrated, so you don’t need to use a lot to get a rich color. Buttercream also doesn’t affect the taste or consistency of your buttercream, and it comes in almost any color you can imagine – you don’t have to worry about mixing special colors.
Satin Ice Turquoise Vanilla Fondant
If you’re serious about your buttercream color palette, I recommend getting the Nifty Fifty kit or the Heavenly Seventy kit. As the name suggests, Nifty Fifty comes with 50 gel colors and Heavenly Seventy comes with 70 gel colors. Of course, you can buy any of the Americancolor gels on their own (available in several bottles of various sizes), but it’s always ideal and inspiring to have a complete set of colored gels on hand.
I have to bleach it before adding color (we’ll cover the importance of this below), my favorite icing bleach is American Bright White. If you’ve ever struggled with buttercream that was too yellow for your liking, I recommend keeping a large bottle of this on hand.
Wilton Color Rite Food Coloring System: If you’re not ready to invest in large packs of American Color Gel and don’t want to buy individual colors, the Wilton Color Rite Food Coloring System is great. It comes with eight water-based gels that you can mix with each other to create custom colors. Again, it’s very concentrated and won’t affect the flavor of your buttercream. The only thing I’ll mention with this is that you need to know some basic color theory to achieve the color you want (I’ll give you a quick lesson below!).

I realize there are other brands and types of food coloring products out there, but the above are the ones I use daily and account for all the color palettes I can create. So with that in mind, read on for what I know about making colored buttercream.
Buttercream is what I use, as it makes a big difference in color sense. I use this buttercream recipe for everything I make, like American Buttercream. Of all the buttercream types, American buttercream is the easiest to color and produces a rich, dark color with minimal product.
Other types of buttercream, such as Swiss meringue or other meringue-based buttercreams, are less prone to fading because their high fat content does not work well with water-based gels. This may mean needing to use more product, using a different type of product (such as an oil-based gel), waiting for the color to develop and deepen, or using an alternative method of coloring the buttercream. I’ve never worked with another type of buttercream before, so if Swiss meringue (or any other type) is your thing, you might want to research the best methods and products to use for your job.

Remember that elementary school lesson about colors? Yellow + blue = green etc.? Along these lines, it’s important to know when coloring buttercream that the color your buttercream starts with (aka the base color) will mix with the color you add, which has a huge impact on the final color. For the purest color palette, you should start with a buttercream white, because white + any color = the same color (which intensifies as you add more colors).
My go-to vanilla buttercream recipe has a fairly pale tone to start with and it’s easy to mix in color, but if you start with a more yellow buttercream, it will mix with the color you add to it. To solve this you need a good icing bleach like the Americolor Bright White mentioned above. I add a teaspoon or two to each batch of my buttercream at the very end of the recipe, make sure it’s mixed well, and just watch the difference:
If the end result of your coloring session is in the yellow color family (yellow, orange, lime green, etc.) it’s best to start with a yellow buttercream, but remember the base color will affect the final result. Other than that, only time I recommend
How To Make Brown Food Coloring
If you want to go for black, dark burgundy or dark brown, start with white buttercream. In cases like this, always start with cocoa buttercream because it’s much easier to go from brown to black (and more) than it is to go from white to black.
It takes practice to figure out how much buttercream you need for different situations – what’s the ideal amount for filling and frosting a cake? Or for the final layer of frosting on top of a crumble-coated cake? Or just for some buttercream flowers? Since amounts vary so much, it’s nearly impossible to come up with a “recipe” (or how many drops to use) for different color intensities.
I would say that the less amount of buttercream you start with, the less amount of tint gel you need to use to get a rich color. Therefore, if you choose a pastel color and start with a small amount, it is easy to add too much color gel and overdo it. Once you’ve measured the amount of buttercream, the best way to approach buttercream staining is to start with a small amount of gel to see what color you want and work your way up from there.

For example, I have two bowls here with about ½ cup of buttercream in each. I start by adding about half a drop of Fuchsia Color Gel to the bowl on the right and mixing it all together.
After mixing it all together, I can see that we end up with a very light pink color and feel more comfortable adding another drop to get a fuchsia pastel.
Now I’m going to double the amount in the bowl on the left (so, three drops) to show how fast this color can grow.

The more buttercream you have, the more drops you need to use to intensify or darken the color. That said, you just need to practice and always start with a small amount of gel unless you want to start with a really dark color.
Not only do the colors get richer and richer as you add more color gel, it’s also important to know that these colors will actually get a little darker.
. Again, this will require practice and patience, but see how the fuchsia color darkens after 15 minutes from the example above:

So whether you choose a dark color or not, be sure to take into account that it will probably darken a little over time.
Especially if you’re mixing custom colors, knowing a thing or two about color theory will give you a lot of confidence.
