Red Velvet Cake is a classic. With its beautiful appearance and unique taste, it is easy to see why it has become a favorite. The only problem is that most recipes call for a spoonful or many types of red meat. That’s a lot! Commercial food brands are derived from petroleum and have been linked to allergies, bedwetting, lack of exercise, and more.

Although some studies are inconclusive, the possibility alone makes me go in the other direction. We’re trying to stay as natural as possible here, so I looked at a healthy source of signature color: roots.

Radishes have a red/purple color, so deep and bright they look weird! They’re also full of healthy nutrients like folate, manganese, and vitamin C, but really, it’s the variety we’re interested in here. After much research, it seems that the secret of the natural pink cake using roots is acidity. I’ll save you a lot of scientific talk, but without the right pH, roots will turn brown. That means adding things like vinegar, buttermilk, yogurt or lemon.

I used white vinegar, which has 6% acidity compared to regular vinegar or apple cider vinegar which is 5%, and lemon juice. I also used baking powder instead of baking soda, because it has a higher pH because of the cream of tartar. (Baking powder is simply a mixture of baking soda and cream of tartar. Since cream of tartar is acidic, baking powder can be used without adding acid to leaven ingredients, such as buttermilk or lemon juice.)

The final product is delicious. I said ‘wow’ out loud as I stood in the kitchen after my first taste. I’ll be honest – I wasn’t expecting much. I thought it would be sweeter than the vinegar and sand from the radishes, but it’s so sweet! The chocolate flavor floats lightly, not too strong but definitely there, and the crust is moist and dense, but not heavy.

If your roots come with leaves still attached, cut them off. Wash the roots and wrap them in aluminum foil (no need to dry them, the water helps them to cook).

Place the radishes wrapped in baking paper to catch any drips, and bake in the oven at 400 F for 40-60 minutes, or until a fork easily pierces the flesh.

Remove from oven and allow to cool. The skin should tear easily. Chop the beetroot and puree it well (I used a food processor but I think a blender would work too).

Step Three: In another medium bowl, combine milk, pureed radish (see above how to make it), lemon juice and vinegar.

Step 4: In your mixing bowl, combine the butter, sugar, and vanilla. Add the eggs one at a time, beating well after each addition. Add a third of the liquid ingredients, followed by a third of the dry ingredients, alternating wet and dry and mixing well after adding.

Step 5: Pour into your prepared pan and bake for 30 minutes, or until a toothpick comes out clean and the tops look firm. Let cool in pans for 10 minutes, then remove from pans and cool completely on a wire rack before frosting. Check out the recipe below for the Cooked Frosting or use my Ice Cream.

Step 6: To increase the velvet cake, I recommend that you spread a thin layer, and put the cake in the refrigerator for an hour to dry a little. Remove the cake from the fridge and continue to chill. This will keep the red bits from blending into the white frosting.

I vividly remember my first taste of the red soft cake. Years ago, I was given a red velvet cake. Eating was like a normal day’s feast. It was a beautiful combination: a soft and bright pink cake with a soft and creamy cheese filling.

Velvet cake dates back to the Victorian era, when the word “velvet” was used to describe a cake that was softer than a pound or sponge. Red velvet cake originally got its color from a reaction between cocoa and soda. During WWII when ingredients were scarce, bakers used carrot juice to decorate cakes. Today, it is often made with red food coloring.

The Waldorf Astoria Hotel in New York City served a purple cake in the 1930s, and tried to mention why, but the cake was already popular at the time. The Waldorf brand can take a little credit for helping spread the word about the red carpet, though. John A. Adams, of the Texas-based Adams Extract Company, tasted the hotel’s cake, and in 1940 the company developed a recipe for using the company’s food coloring. This contributed to the spread of southern cakes, where bakers add butter to the original milk, giving it a unique southern flavor.
